1 tsp olive oil
1/2 onion, diced
3 cloves of garlic, minced
1 container of firm or extra firm tofu, pressed and crumbled
1 tsp of curry
1/2 tsp of turmeric
1/2 tsp of cumin (optional)
salt and pepper to taste
2 tomatoes, diced
1 bunch of fresh spinach
Sautee the garlic and onion in olive oil in a large skillet. Allow to cook for 3-5 minutes, or until onion turns soft. Add remaining ingredients except spinach and cook, stirring frequently for another 5 minutes or so, until tofu is hot and cooked.
I know Richard has used one or two of these recipes. Anyone else?

Yes, I am making these recipes, to failry decent success. In this recipe, there is the mystery of the spinach? Is there something missing, or do you just add it afterwards?
When did this become a cooking blog? You know, this recipe would be really good with some fresh parsley, or maybe served with rice.
Since I thought I'd spread the word Mr.S. It is good served with rice but I prefer it tucked into a wrap. Fresh parsley sounds good, I'll have to try that next time.
Mr. D, cut the stems from the spinach and add it during the final minutes of cooking.
