Broccoli, Broccoli Who?

Broccoli, Tofu and Cashew Stir Fry

Another recipe for the database. This is probably my favorite of the three that I've now posted. Again, this is a super easy recipe that includes two of the 7 super foods - you guessed it broccoli and soy (tofu). It also has many of the same ingredients, ginger, garlic and soya sauce, as the last recipe that I posted. Using some of the leftover shiitake mushrooms would be a great addition to this recipe, don't you think? I'm getting hungry just thinking about it!

I'm posting the recipe from memory so hopefully it's complete and accurate.
  • one tsp of olive oil

  • 3 cloves of garlic (or to your taste)

  • about a thumb sized peice of fresh grated ginger

  • about half an onion, chopped

  • one small head of broccoli chopped into bite-sized pieces

  • one package of tofu, well pressed and cut into cubes

  • 3 tsp of soya sauce

  • about half a bag (100g) of cashew nuts

Saute garlic, ginger and onions in olive oil for about 3 or 4 minutes. Add the broccoli. After a few minutes add the tofu and the soya sauce. When the tofu is heated through add the cashew nuts. Mix well and there you have it another delicious veggie meal.

The week before Korea we should have all three.
